US-05 is the dry equivalent of the famous “Chico” strain that built California craft beer. It ferments cleanly, drops out reasonably well, and gets out of the way. If you’re brewing an American pale ale, IPA or any hop-showcase beer, this is the safe default.
Pitching
One sachet covers up to 20 L at OG 1.060. Above that, pitch two. Direct-pitch onto well-aerated wort at 18-20 °C; rehydration is optional with modern dry yeast — see fermentation basics.
Temperature
US-05 will ferment cleanly anywhere from 15 to 22 °C. Lower in the range gives an almost lager-like clean profile; warmer brings out a touch of peach ester. Above 22 °C it can produce noticeable fusel alcohols.
