S-04 is one of the most widely used dry ale yeasts on the homebrewing market. It rehydrates well, drops out cleanly, and works especially well in English-style ales where modest fruit ester is welcome but cleanness still matters.
Pitch one 11.5 g sachet for a typical 5-gallon batch up to 1.060 OG. Above that, pitch two.
